Macaroni and cheese: it’s hands-down the kid favorite, but you needn’t be a kid to find joy in a bowl of creamy, cheesy noodles. If it’s not America’s number one comfort food, it certainly tops the list here, high up in Colorado’s Rockies.
Mac n’ cheese is the guest of honor, so to speak, next week at Copper Mountain’s fifth annual Mac n’ Cheese Fest. You heard right: a festival to celebrate the revered mac n’ cheese.
We’re not talking ordinary mac n’ cheese.
During this weekend, Copper’s chefs dish up creative spins on this classic, including to-die-for dishes of the cheesiest noodles served with indulgent ingredients like bacon, buffalo, pork belly, crispy pancetta and smoked lamb shoulder. Our chefs elevate mac n’ cheese with decadent new combinations of cheese, including gouda, Boursin and gruyere. You can eat your mac n’ cheese with a side of ribs, kielbasa or snuggled within a freshly made crepe.

There’s plenty to do when you’re full (or just taking a break to make more room). In addition to Copper’s regular menu of summer activities, including the mountain coaster, zipline, go-karts, bumper boats and more (don’t miss the buy one get one free offer on summer activity day passes), this event includes magicians, balloon and caricature artists, bubble and money machines, ball pit and even a kids craft area, hosted by Sunny Side Up Studio in Frisco – the locals’ favorite creative place. Feeling competitive? Check out the hula hoop, limbo and eating contests. Don’t miss this year’s sculpture, made from – you guessed it – cheese.
